I would say, in terms of jamming, latency must not exceed 10 milliseconds. What does realtime mean? As long as you use the internet you have to live with delays in any case. In this case realtime means that you can actually play together at the same time, and that requires latencies of under 100ms to be reasonable. You can check out my Zoids Revisited, that's Bosendorfer 290 from EastWest on the middle part. My "playing" is awful of course since I can't really play the piano or synths, but the sounds are pretty ok IMHO.

You should check out the new Native Instruments Akoustik Piano too.
